Papaya Parippu Curry
Curry - Vegetable
INGREDIENTS
o 200 g / 7 oz unripe papaya, peeled and cut into chunks
o 25 g / 1 oz chana dal
o 50 g / 2 oz freshly grated or desiccated coconut
o 1 green chilli
o 1 t fennel seeds
o 2 T oil
o 1 t mustard seeds
o 1 large onion, finely chopped
o A few curry leaves
o 1 t turmeric powder
o Salt
METHOD
In a large saucepan of salted water, cook the papaya, covered, over a medium heat for 15 minutes until the fruit is tender. Drain and set aside.
Meanwhile, wash the chana dal in cold water. In a small saucepan, bring 225 ml / 8 fl oz of salted water to the boil, add the chana dal and cook, covered, for 10-15 minutes until well cooked. Set aside.
Using a spice mill or pestle and mortar, grind the coconut, green chilli and fennel to a fine paste.
In a large frying pan, heat the oil. Add the mustard seeds and as they begin to pop, add the onion and curry leaves. Stir well and cook over a medium heat until the onion is golden brown. Add the ground coconut mixture, then reduce the heat and cook, stirring for 2-3 minutes. Mix in the cooked papaya and chana dal and serve hot.
Papaya Tarkari (Raw papaya curry)ingredients
serves: 2 - 4
300 g (11 oz) Raw papaya, diced
2 tbsp (30 ml) 1 oz Vegetable oil
2 tsp (4 g) Punch phoran
1 Bay leaf (tej patta)
1 tsp (2 g) Turmeric (haldl) powder
1 tsp (6 g) Ginger (adrak) paste
1 tsp (2 g) Red chilli powder
2 tsp (10 g) Green chillies, chopped
50 g (1 3/4 oz) Tomatoes, chopped
1 cup (250 ml) 8 fl oz Water
Salt to taste
method
1. Heat the oil in a wok (kadhai); add panch phoran and bay leaf. Let it crackle for a while.
2. Add papaya and saute; add turmeric powder, ginger paste, red chilli powder, green chillies, and tomatoes.
3. Pour in the water and add salt. Cook till the water dries out and the papaya is cooked.
4. Serve hot.
Raw papaya vegetable
Ingredients
1 raw papaya coriander leaves
2to3 green chilies
salt to taste
mustard seeds1/4tsp.
1/4tsp turmeric powder
oilfor cooking
Cooking Instructions
Peel the papaya then grate it.Place the kadhai on the fire add one tbs. of oil put in the mustard seeds when the seeds are done put in chopped green chillies then add raw papaya turmeric salt stir it gently cover it for 5 min.
Then remove it from fire and decorate it with coriander leaves.A healthy fast cooking ayurvedic vegetable for everyone.
